This is the natural method in contrast to the extraction made by use of chemicals as in the case of seed oils. The olive oil is a natural juice without additives or any other admixtures which may have effect on its aroma, fine taste, low acidity and generally its excellent quality. Factors determining and effecting the quality are: the soil, the climate, the olive tree variety, the modern equipment used for extraction and the long inherited for generations.
